Ingredients
4 cod fillets
1 cup panko breadcrumbs
1 cup parmesan cheese, grated
1/2 lemon, juiced
2 Tbs butter, melted
1 Tbs olive oil
1/4 tsp salt
1/2 tsp black pepper
Directions
- Preheat oven to 450° F. Line a rimmed baking sheet with foil; spray with cooking spray. Place cod on baking sheet. In a bowl, stir together breadcrumbs, parmesan, lemon juice, butter, olive oil, salt and pepper. Evenly spread mixture over top of cod. Bake for 15 minutes, depending on thickness of fish. (Thicker pieces need to cook longer.) Remove from oven. Use a thin spatula to lift each piece of cod off of baking sheet.
